TRAVEL

The United Arab Emirates (UAE) is situated along the south-eastern tip of
the Arabian peninsula between 22º 50 and 26º north latitude and between
51º and 56º 25 east longitude. Qatar lies to the north-west, Saudi Arabia to
the west, south and south-east, and Oman to the south-east and north-east.
Occupying an area of about 83, 600 sq. km (32,400 sq. miles) – roughly
the size of Portugal. The coastline of the UAE was approximately 1318 km but
land reclamation projects, notably the three 'Palms', are extending this figure

WHEN TO VISIT

The best time to visit the UAE is from October up until May.
In October the weather may still be quite hot (up to 35C), blue skies are the norm and the evenings are warm. At this stage the tourist season is well under way.
Daytime temperatures are ideal during November, December, January and February (around 24C) although the evenings may be a little cool (13C). North-westerly winds (shamal) sometimes blow during these winter months, bringing choppy seas. Most of the annual rainfall occurs between December and March, but this tends to be in the form of short heavy downpours that rapidly clear away. Indeed some winters are totally dry. By March–April, temperatures are beginning to rise during the day (early 30s) but humidity is still low and the evenings are warm. May can be quite hot again (late-30s).
June–September are to be avoided, especially the July–August period which is very hot (high 40s) and humid (100 per cent). However hotels and golf clubs and other facilities offer very good deals during the summer months and it is worth remembering that hotels, shops, in fact all buildings, cars, buses etc are air-conditioned.

Ramadan

You should also consider whether you would like to visit during the Muslim holy month of Ramadam. During Ramadan (the exact dates move forward by approximately 11 days each year), Muslims do not eat or drink between sunrise and sunset. Visitors are requested not to eat, drink or smoke in public places during this time. Most restaurants are closed during the day, although food will be served in your hotel, either in your room or in a secluded area of the hotel. Alcohol is served in some emirates after sunset.
Despite these restrictions, there are certain advantages in visiting the UAE during at this time. You may be able to obtain discount rates on some hotels and once the daily fast is broken (by the iftar meal after sunset) the streets are a hive of activity, which lends a carnival atmosphere to the towns.

Many people consult this page in order to find information on how to apply for a visa to enter the UAE. The good news is that the UAE authorities have taken many steps to make this process as straightforward as possible. Apart from the fact that citizens of 39 countries (i.e. GCC nationals plus nationals of listed countries) do not require visas prior to arrival at a UAE airport, there are efficient systems in place to facilitate visitors not falling into one of the above categories. If you are coming to work in the UAE you will require a visa that can only be obtained on your behalf by your employer or sponsor.
As noted above, the kind of visa that you require for entry into the UAE depends on several different factors such as your nationality, the purpose of your planned visit and its planned duration. Please read the following notes carefully. You may also find information on this subject in our news archive. Regulations do change from time to time and, whilst we do endeavour to keep up to date with these note, please do not rely uon them for complete accuracy. You should also check with your airline and regional UAE embassy or consulate.

- If you are a national citizen of a GCC country you do not require a visa to visit the UAE. You will simply need to produce your GCC country passport upon arrival at the point of entry into the UAE

- The following categories of visitors may receive their visit visa at the airport, upon arrival.
1. AGCC Residents who are not GCC nationals but who have a high professional status such as company managers, business people, auditors, accountants, doctors, engineers, pharmacists, or employees working in the public sector, their families, drivers and personal staff sponsored by them, are eligible for a non-renewable 30-day visa upon arrival at the approved ports of entry.
2. National citizens of the following countries:

UK(with the right of abode in UK), France, Italy, Germany, the Netherlands, Belgium, Luxembourg, Switzerland, Austria, Sweden, Norway, Denmark, Portugal, Ireland, Greece, Finland, Spain, Monaco, Vatican, Iceland, Andorra, San Marino, Liechtenstein, United States, Australia, New Zealand, Japan, Brunei, Singapore, Malaysia, South Korea and holders of Hong Kong SAR passports will be granted a free of charge visa for a single visit upon arrival in the UAE. It should be noted that this list may vary slightly from time to time and it is therefore best to check with your local UAE embassy or the airline that you are using to fly to the UAE.
- If you do NOT fall into one of the above categories, you will require a visa and a sponsor for your visit. The sponsor normally applies for the visa on your behalf.
Valid sponsors may be as follows:-
a - Hotels & Tourist Companies can apply, on your behalf, for a Tourist Visa (valid for 30 days); or a Service Visa (valid for 14 days); or a Visit Visa (valid for 30 days and can be extended for other 30 days) b - Airlines & Airlines Handlers apply on behalf of their crew members for a 96-hour Transit Visa. c - Other Organizations based in the UAE may only apply for Visit Visas and Service Visas. d - Individuals (Relatives or Friends) already resident in the UAE may, subject to guidlines, also apply on your behalf for a Visit Visa.
Entry Service Permit
An Entry Service Permit applies to the following categories and their families accompanying them: company manager’s representatives, sales managers, account auditors, delegations from companies or establishments to carry out a commercial activity in the UAE, consultants requested by companies operating in the UAE that are required to carry out an urgent task.
This visa is valid for use within 14 days from the date of issue. The duration of stay is 14 days from date of entry, exclusive of arrival and departure days. It is non-renewable.
In order to complete the application, the sponsor will require the visitor’s date of arrival and flight details, and a photocopy of the first few pages of the visitor’s passport which should be valid for at least three months. This type of entry permit will only be issued as urgent at a fee of AED 220.
The Entry Service Permit holder may enter and depart the UAE through any airport.
Visit Visa
The Visit Visa applies to tourists who wish to spend more than 14 days in UAE, those coming for family visits as well as those on long-term business visits. It requires the sponsorship of any UAE resident or any company or hotel licensed to operate within the UAE. A refundable AED 2,000 guarantee from expatriates who wish to sponsor distant relatives is imposed.
This visa is valid for entry within two months from its date of issue.
The Visit Visa is valid for 60 days and is renewable for a total stay of up to 90 days. A fee of AED 500 is charged for this renewal.
In order to complete the application, the sponsor will require the visitor’s date of arrival and arrival details and a photocopy of the first few pages of the visitor’s passport, which must be valid for at least three months. There is a fee of AED 100 for obtaining a visit visa. There is also a fee of AED 10 for visa delivery service by DNATA. Hotels, hotel apartments, tour operators, travel agents and airlines may not levy supplementary charges or processing fees in excess of AED 50/- for arranging visas for visitors.
The Visit Visa holder may enter and leave the country through any port of entry in the UAE.
Tourist Visa
A special category of visas under the Visit Visa type is a Tourist Visa, which can be obtained for individual tourists from: East and West Europe, Turkey, Bulgaria, Poland, Ukraine, Albania, Russia, the Hellenic Republic, St Kitts-Navis, St Lucia, Mexico, Cuba, Bermuda, Belize, Guyana, French Guiana, Martinique, Antigua and Barbuda, St Vincent, Jamaica, Palao other non-defined American nationalities, Thailand, South Africa, Singapore, China, Malta, Cyprus.
The Tourist Visa entitles its holder to a 30 day stay and is non-renewable. The Tourist Visa requires the sponsorship of hotels and tour operators who bring in visitors from the above listed countries. The fee is AED 100. There is also a fee of AED 10 for visa delivery service by DNATA. Hotels, hotel apartments, tour operators, travel agents and airlines may not levy supplementary charges or processing fees in excess of AED 50/- for arranging visas for visitors.
Multiple Entry Visas
Multiple-entry Visas are issued to business visitors who have a relationship with either a multinational or other reputable local company, and who are frequent visitors to the UAE. This type of visa is valid for six months from the date of issue and the duration of each stay is 30 days. The validity is non-renewable. The cost of this visa is AED 1,000.
The visitor must enter the UAE on a visit visa and obtain the multiple entry visa while in the country. The visa is stamped on the passport.
Transit Visa
Transit passengers stopping at Dubai International Airport for a minimum of 8 hours and meeting the certain conditions mentioned below are eligible for obtaining a 96-hour transit visa. These conditions are as follow:
Airlines sponsored only (prior arrangements maybe required)
Applications should have confirmed onward booking to the 3rd destination For transit passengers or those holding special permits, or for visit or mission, the passport or the document must be valid for at least three months Citizens of the following countries are not eligible for the 96 hours visa on arrival: Somalia, Afghanistan, Iraq, Niger, and Yemen.

German Citizens
The German citizens (tourists and business people) may apply to the UAE embassy in Germany for a one or two year multiple-entry visa. No sponsor is required. The maximum duration of stay of visa holders should not exceed three months a year. The visa fee is AED 1,500
US Citizens
The US citizens (tourists and business people) may apply to the UAE embassies in the US for one to ten year multiple-entry visas. A sponsor is required and the visa will be granted free of charge. The maximum duration of stay should not exceed six months a visit
UAE Visa Requirements For CANADIAN Citizens

(The Requirements may be changed in the future) I. Visas Issued from the UAE Embassy in Ottawa: 1) Visa Application to be correctly and fully completed (typed).
2) Clear and recent passport size photo.
3) Passport copy (Passport must be valid for at least 6 months at departure).
4) Complete the Attachment to the Visa Aplication & the Application Form.
5) Money order, Certified Cheque or Draft Cheque with the correct amount in Canadian Currency needs to be made payble to the UAE Embassy, Ottawa.
6) The Amount paid is non-refundable in case of a visa refusal.
7) The Visa application (with all requirements), the Self-Addressed Prepaid Return Envelop and the money Order need to be sent by courier to the UAE Embassy, attention Visa Section.
8) The complete Visa Application needs to be sent to the UAE Embassy 15 working days before the departure date.

AGCC Citizens
Citizens of the Arab Gulf Co-operation Council member states (Bahrain, Kuwait, Qatar, Oman, and Saudi Arabia) do not need a visa to enter the UAE.

Customs
Customs clearance in the UAE is fast and efficient. No customs duties are applied to personal belongings. However, since the UAE is an Islamic country, religious propaganda, potentially offensive printed matter, CDs videos or films should not be brought into the country. All personal imports of such materials are checked at customs. Since strict copyright laws are being enforced in the UAE, pirated video and audiotapes or illegal computer software will be confiscated.
Needless to say controlled substances such as cannabis, opium etc, are banned and the penalties for handling these drugs are severe. If a blood test for illegal drug usage proves positive, you can be charged with a criminal offence – even if you used the drug before arrival in the UAE. The importation of firearms and dangerous weapons is also restricted.
Duty free allowances
2000 cigarettes; 400 cigars; 2 kg tobacco; 2 litres of spirits and 2 litres of wine (non-Muslims only) and perfume. It is prohibited to import alcohol into Sharjah and you are generally not allowed to bring alcohol into the country if you are travelling by land.

HOTELS
Accommodation in the UAE is of a very high standard and most of the world’s top hotel chains run five-star hotels in the Emirates, the pièces de resistance being the Emirates Palace Hotel in Abu Dhabi and the Burj al-Arab in Dubai. There are also a number of excellent locally run properties suitable for both tourists and business travellers. Several of the hotels are outstanding examples of modern architecture. Swimming pools, tennis courts and fully equipped health centres are the norm. Most waterfront hotels have excellent beaches and extensive watersports facilities. If your budget does not extend to a five-star hotel, there are alternatives, most also of a high standard.
Away from the main cities, some spectacular destinations, such as the Anantara-run Desert Islands Resort on Sir Bani Yas island, the dramatically located Qasr Al Sarab in the famous 'Empty Quarter' (the largest sand desert in the world) and the beautiful Banyan Tree Al Wadi in Ra's al-Khaimah, have opened up in recent years, adding impressive variety and value to the accommodation pool in the UAE. Fujairah, on the east coast, has also invested heavily in resorts.

GETTING AROUND
Most tourists visiting the UAE on all-in package tours will base themselves at one or more hotels in the UAE, using the ubiquitous and inexpensive taxis for sightseeing and shopping, and local tour companies for more extended trips. The Metro in Dubai is also an excellent way of getting around that city. However, it is worth remembering that cars and four-wheel drives are readily available for hire, the road network is excellent and there are intriguing places to visit far from the cosmopolitan cities.

TIPPING
Tipping is not compulsory, but is common practice. Gratuities to staff at hotels are at your discretion. Most restaurants add service charges to the bill (Abu Dhabi 16 per cent; Sharjah 15 per cent; Dubai 10 per cent). If this charge is not included, add 10 per cent of the total to the bill. Taxi drivers do not expect to be tipped. Supermarket baggers, bag carriers and windscreen washers at petrol stations are generally given a tip.
PHOTOGRAPHY
Ask permission before photographing people in general. Avoid photographing Muslim women and do not photograph airports, docks, telecommunications equipment, government buildings, military and industrial installations.
TIME
The UAE is four hours ahead of GMT. The time does not change during the summer. This means that there is a three-hour difference between UK and UAE local times in summer and a four-hour difference in winter.
ELECTRICITY
Domestic supply is 220 volts. Sockets suitable for three-pin 13 amp plugs of British standard design are the norm. However, it is a good idea to bring an adaptor with you. Alternatively, adaptors can be purchased in local supermarkets. Appliances purchased in the UAE will generally have two-pin plugs attached.
WEIGHTS AND MEASURES
The UAE uses the metric system, although British and US standard weights and measures are understood.
CLOTHING
Lightweight summer clothing is ideal with a wrap, sweater or jacket for cooler winter nights and air-conditioned premises. Although the dress code in the UAE is generally casual, guests in the larger hotels do tend to dress more formally in the evening. Since you are visiting a Muslim country, bikinis, swimsuits, shorts and revealing tops should be confined to beach resorts. Women are usually advised not to wear short skirts and to keep their shoulders covered. Note that in Sharjah women are prohibited from wearing swimsuits on public beaches.
TOILETS
Most shopping centres, public gardens, museums etc have clean, well-maintained public toilets. Outside of the cities, you can find good public toilets at restaurants and petrol stations.
FOOD AND WATER

The standard of food hygiene and water quality is extremely high, especially in all of the larger centres. You should take the time to investigate conditions in smaller cafés in remote areas, although again standards are usually good. Raw salads and shawarmas (meat cooked on a spit and served in a pittta bread sandwich) are to be avoided if you have any doubts.

Drinking water is usually produced by desalination so it is normally safe to drink, nevertheless you may prefer the taste of bottled water. In any case it is advisable to drink plenty of water in the heat so carry a bottle with you at all times.


CONTROLLED DRUGS GUIDELINES

List of Restricted Medication in the UAE
Below is a list of Controlled Medicines and Medications, registered with the Ministry of Health in the UAE and enforced by the UAE Ministry of Interior and International Narcotic Controlled Board (INCB).

These items are essentially available only in hospitals and in large community pharmacies, under the prescription of doctors. The Ministry of Health advises that unlicensed, controlled medicines can only be imported into the UAE through hospitals and not by individuals.

However, the Drug Control Department of the Ministry of health does have special regulations for personal import of such items: patients or travelers carrying prescribed prescription medications must have their prescriptions issued by licensed doctors, attested by a notary public, and, in the case of U.S. citizens, duly authenticated by both the secretary of state of one’s U.S. state, and finally also authenticated by the Secretary of State of the U.S. Government in Washington, D.C.

MONEY MATTERS

The UAE operates a free, open economy and there are no currency regulations in operation. It is extremely easy to change money at banks and exchange houses throughout the country where the best rates are available.

CURRENCY AND EXCHANGE RATES
Currency
The dirham (pronounced dir-ham) is the official currency of the UAE. Dirham notes are in 5, 10, 20, 50, 100, 200, 500, and 1000 denominations. The dirham is divided into 100 fils, coins include Dh1, 50, 25, 10 and 5 fils (10 and 5 fils are rarely used). The value is written in Arabic only but Arabic numerals are easy to memorize (see section on Arabic Language).
Exchange
There are no currency regulations and foreign currency of almost any denomination is readily exchanged in the UAE. The dirham is index linked to the dollar and the official exchange rate is Dh3.671 = US$ 1.00. The best exchange rates are generally available at private moneychangers found throughout the UAE, but especially in the more popular souqs and shopping centres.

The UAE Exchange Centre (associated with Western Union) has branches throughout the UAE. Thomas Cook Al Rostamani (authorized representative of Thomas Cook’s financial division) and Al Razouki International Exchange Company are also well represented.

METHODS OF PAYMENT
Hotel exchange rates
Hotels offer a bureau de change service. However the rate is usually less favourable than that available at moneychangers and banks..
Personal cheques
Although there have been major changes in recent years, the UAE is still a cash-driven society and personal cheques are not readily accepted.
Travellers’ cheques
Most travellers’ cheques can be cashed at hotels, some moneychangers and banks. You should enquire about the commission before exchanging your cheques.
Credit cards
Most internationally recognized credit cards (e.g. VISA, MasterCard, American Express, Diners) are accepted by car rental companies, larger shops, hotels and some restaurants. However, you should carry some cash for general shopping and eating out at smaller establishments. Some small retailers, even if they do accept credit cards, may charge an additional 5 per cent for processing your payment with a credit card.

Your ATM card is probably the most convenient method of obtaining cash and ATM’s are located at many local banks. However, it would be wise to check beforehand with your own bank whether your card will work in the UAE. Check also whether there is a transaction fee for cash withdrawal from ATM machines using a foreign bankcard.



FOOD AND DRINK

Eating Out
Visitors from many parts of the world along with a multi-ethnic resident community have ensured that a sophisticated and innovative food culture has developed in the UAE. Almost any type of food is available, from classic European to Pacific Rim. You can eat Mexican, Polynesian, Japanese, Chinese, Thai, Korean, Indian, Pakistani, Persian, Italian and French cooking, and more, at some of the finest restaurants in the Middle East.
In recent years, celebrity chefs have launched a variety of fashionable pricey restaurants in Abu Dhabi and Dubai. Gordon Ramsay’s Verre (04 227 1111) at The Hilton Dubai Creek was the first to open. It is now run by Michelin-starred Head Chef Scott and is famous for its chef’s table.
Gary Rhodes’ Mezzanine (04 399 8888) features many of his original British-inspired dishes in an elegant setting at Dubai Marina’s Grosvenor House. Rhodes has also opened the Rhodes Twenty10 grill at the nearby Le Royal Meridien Beach Resort .
Vineet Bhatia, the first Indian chef to receive a Michelin star, is shining bright and clear at Indego (04 399 8888) also in Dubai Marina’s Grosvenor House.
Renowned Japanese chef Nobu Matsuhisa produces some of his signature dishes at Nobu (04 426 26260) in Atlantis Hotel at the tip of The Palm.
Three restaurants were also launched at the newly opened One&Only The Palm resort in Dubai under the guidance of the Michelin-starred French chef Yannick Alleno. Whilst Michelin-starred French chef Pierre Gagnaire recreates French style at his richly-decorated restaurant Reflets (04 701 1111) in Dubai's Intercontinental Hotel in Festival City.
Abu Dhabi has not been left behind in the rush to open up branded restaurants with a focus on fine dining. Hakkasan (02 690 7999), famous for its flagship Michelin-starred London-based Chinese restaurant, is making a name for itself at Emirates Palace Hotel on the Corniche.
Marco Pierre White, who operates a branded restaurant Frankie’s on Dubai’s JBR Walk in conjunction with the jockey Frankie Dettori, has also opened a steakhouse and Frankie's Italian Restaurant and Bar (02 654 3238) at Abu Dhabi’s Fairmont Bab Al Bahr.
The world-famous Italian restaurant brand Cipriani’s (02 565 0010) can be experienced in all its splendour at Yas Marina Yacht Club on Abu Dhabi’s Yas Island. And if you are on Yas Island, don’t forget to try Nautilius (02 656 0760) at the Yas Island Hotel, which has been getting ravishing reviews for its seafood fare.
Gourmet food, including cookery demonstrations by renowned chefs can be experienced at two unique festivals in the UAE, the Taste of Dubai Festival, which usually takes place in March at Dubai Media City and Gourmet Abu Dhabi, a celebration of culinary superlatives held in February.
International fast-food chains, serving the standard fare of hamburgers, chips, pizzas etc (McDonalds’s, Pizza Hut, Pizza Inn, Hardee’s, Wimpy, Dunkin’ Donut) are also located in the larger cities. Kentucky Fried Chicken seems to be a particular favourite. International theme restaurants such as TGI Friday’s, Planet Hollywood, Fashion Café, Hard Rock Café and Henry J Bean’s are all represented in the Emirates. If you cannot find anything to suit in that list, small ethnic cafés and corner stalls are ubiquitous. Shisha cafés offer an opportunity to smoke a shisha (hubble-bubble pipe) and serve food, coffee, tea and fruit juices and corner stalls serve sharwarmas and other sandwiches.

Gulf and Middle Eastern food is also available in a wide variety of venues, from expensive restaurants to local cafés. Fresh fish from the Arabian Gulf is always good – try lobster, crab, shrimp, or grouper, tuna, kingfish, red snapper, grilled, stuffed, or fried with spices. But it is not just a question of variety, make no mistake the food is generally good and the standard of service is high.

Pork
Muslims are prohibited from eating pork so it is not included in Arab menus. Hotels frequently have substitutes such as beef sausages and veal rashers on their breakfast menus. If pork is available, it is clearly labelled as such.
Alcohol
Alcohol is generally only served in hotel restaurants and bars (but not in Sharjah). Exceptions are some clubs (e.g. golf clubs) and associations. Restaurants that are not associated with hotels are not permitted to serve alcohol.


Local Dishes
One of the most exciting aspects of travelling to a new destination is the opportunity to sample local food. Gulf food is, of course, very similar to Lebanese and other Arab cuisine. However, there are some variations. Mezze (starter or hors d’oeuvre) as it is served in UAE restaurants is a wonderful treat, comprising some or all of the following:
Hummus (chick pea dip or spread) Kibbe (meat patties made from minced lamb, bulghur and onions) Tabbuleh (salad of couscous or bulghur with diced tomatoes, onions, mint and parsley) Moutabel (aubergine or eggplant dip) Kussa mahshi (stuffed courgettes or zucchini) Warak enab (stuffed vine leaves) Felafel (bean patties- often served in pitta bread at corner stalls) Pitta bread (unleavened bread)
Khuzi (a stuffed whole roast lamb on a bed of spiced rice) is the dish that would have been served at a mansaf, a traditional bedouin feast, where a selection of food would have been placed on the floor in the centre of a ring of seated guests. Makbus (casserole of meat, usually lamb, or fish with rice) is a particular favourite in the UAE. So too are hareis (slow-cooked wheat and lamb), biryani (meat or fish cooked with Indian-style spiced rice) and shurba addis (lentil soup). Try a traditional Arab breakfast of ful medames (a bean dish in a tomato sauce on which is sprinkled chopped onion, egg and other condiments, accompanied by local yoghurt and pitta bread), or snack on fattayer (deep fried pastries stuffed with cheese and spinach). Local seafood such as hamur (grouper), chanad (mackerel), beyah (mullet) are usually charcoal grilled. Local lobster and crab are particularly delicious. Sharwarmas – slivers of spit-roasted lamb or chicken, served with salad in a warmed pitta bread pouch – or felafel sandwiches are widely available.
Desserts are generally very sweet, frequently pastries filled with honey and nuts. Try Umm Ali, a delicious bread pudding with raisins and nuts. Dates, of course, are a standard staple and excellent local fruit and vegetables are increasingly on display in restaurants and shops.

Taste of Dubai 2011
Large quantities of butter for flavour and colour, a hands-on approach for preparing, testing and tasting, and tantalizingly delicious food were the common ingredients in the demonstrations by Michelin-starred celebrity chefs at the Taste of Dubai Festival. Otherwise, the range of food and the style of presentation were quite different.
The first demonstration I attended was by Vineet Bhatia from the restaurant Indego by Vineet at Grosvenor House in Dubai, Rasoi, London, and a string of restaurants across the globe. Indego’s unassuming Head Chef John Sinjobi assisted Bhatia who has two Michelin stars and is a pioneer of contemporary Indian cuisine.
The menu, herb-infused tawa chicken, beetroot upma and Punjabi kadhi, he explained, was chosen not just for its balance of flavours but also for colour: vibrant red beetroot, intense green herbed chicken and vivid yellow turmeric-flavoured kadhi. The plated food sang of India in all its tumultuous colour.
This was a relaxed open presentation from a very likeable and engaging chef who involved the audience at all times. A dozen volunteers rushed forward to help him on the podium, including children, who were obviously fascinated by the experience. Bhatia spoke about his passion for cooking and how the most important ingredient in any successful dish was love of food.
Spices must be added in a certain order, he believes – whole spices in hot oil (add a little moist ingredient quickly – such as chopped chili or minced garlic so that the spices won’t burn); next, one of the four powders that more than anything determine the colour of the food – chili powder, cumin, coriander and lastly turmeric. The aromatic garam masala mix, which has essentially been cooked already, should only be included at the very end to maximize the flavour.
Vineet added a tablespoon of butter to his semolina-based beetroot upma just before serving to give the dish a smooth silky flavour. He warned against cooking butter for too long to avoid a heavy oily finish – an aspect of traditional Indian food that is not appealing.
Like all the chefs, Bhatia encouraged using fingers to taste, check whether the food is cooked and when plating. He pointed out that raw meat when pressed with a finger will be soft like the ball of the thumb, whilst cooked meat will feel much firmer to the touch, more like the base of the third finger on the back of the hand.
Since the demonstration, I have been delving through Bhatia’s cookery book, Rasoi: New Indian Kitchen, with great delight, determined to enjoy the sensual delights within its stylish black and orange covers.
Richard Philips was a man on a personal mission, much more remote, very precise, politely demanding of his assistants, and at all times the professional chef, TV personality and owner of four restaurants in Kent. The first, Thackeray’s in Tunbridge Wells, earned him a Michellin star when he was only 29.
To be fair to Philips, he did seem to be working flat out and had just rushed over from doing a demonstration at the Miele stand. His menu was a classic one, foie gras with smoked aubergine caviar, roasted baby onions and crisp polenta. Philips insists that foie gras is now produced in a more animal-friendly manner and let’s hope that he is right.
Butter was used to great effect not so much to brown the succulent fried foie gras as it has has enough oil and flavour already, but to carmelise the onions, to cream the polenta, along with marscapone, and to give the solidified polenta cake that lovely noisette colour and flavour. Not exactly a dietary staple, this dish, but Philips did drain off excess butter on kitchen paper.
Jun Tanaka, critically acclaimed executive chef from Pearl in London, I am sure is on his own mission, but he managed to demonstrate his two classical French dishes with a disarming manner whilst effortlessly juggling numerous pots and pans. I was intrigued with his monkfish poached in spiced red wine (3 parts red wine, 1 part port, cardamom pods and black pepper) served with creamed leeks.
To check that the fish is cooked, he gently inserted a toothpick in the thickest part– this will meet with resistance if the fish is not cooked and slide through effortlessly if it is done. The fillet emerging from the poaching liquid is a gorgeous deep red on the outside, contrasting with the pearly milkiness of the flesh.
To clean the leeks, Tanaka slit them down the middle but not all the way through the bulb and held them upside down in a bowl of water. He used some of the green stem, sliced finely, rolled in flour and deep fried, as a garnish to offset the creaminess of the white bulb to which crème fraiche had been, added and ruefully admitted that he frequently burned this garnish (oil too hot).
Tanaka’s second dish was venison in saltcrust with garlic roast potatoes and creamed horseradish. Two tips here, parboil the potatoes before finishing in butter (lots of it!) and don’t season them until they have achieved that lovely golden colour, otherwise they will stick to the pan. Tanaka also recommends using fresh horseradish mixed with crème fraiche.
Since the venison was cooked in a saltcrust (a paste of flour, salt and water), Tanaka could not employ the finger test to check whether it was done, but he had cleverly put a hole in the top of the saltcrust through which he stuck a thin skewer and pressed it to his lips _– this will be warm if rare – and hot if medium rare – well-done is not in his repertoire! I am looking forward to discovering what his book, Simple to Sensational, has to offer. This was written in the wake of his TV series, ‘Cooking It’.
Gary Rhodes, the ultimate ambassador for British cuisine, needs no introduction. He is also well respresented in Dubai with restaurants such as Mezzanine at Grosvenor House and Rhodes Twenty10 at Le Royal Méridien.
He certainly drew a huge crowd and, helped by his assistant Wayne, who looked like a younger version of the maestro, he cooked the most ambitious menu. However, much had been prepared ahead and, the ultimate pro, he put on a good show without giving too much away.
Rhodes menu was influenced by a recent trip to China: warm sesame glazed duck with an orange and maple dressed salad, steamed seabass, soft spring onion potato with leeks, ginger and soy vinaigrette, and iced lemon meringue, except, of course, for the dessert, which is not a Chinese staple.
Even though I love duck I was a little underwhelmed by this dish – unlike a lot of food that I have experienced in China, there seemed to be too much going on and the addition of a barbecue sauce to the duck confit did not appeal. The sea bass on the other hand, should be very easy to do at home and looked delicious. Rhodes placed a couple of slices of ginger under the parchment-wrapped fish fillet before steaming.
Ginger strips were softened in water them and placed with the spring onion in a colander before pouring hot olive oil over the lot. The oil cooked the vegetables and a little of the infused oil was added to flavour the soy vinagrette (soya sauce, fish sauce and water).
Busily soaking up the atmosphere at the Festival and queuing for the delicious food at the numerous kiosks, I missed some other demonstrations and was particularly sad to miss out on demos by Suzanne Husseini, the Canadian/Arab cook who is causing quite a sir in this part of the world. However, I have booked my ticket for her cookery demonstration and book launch at the upcoming Literary Festival, so watch this space!
